- 2 lbs Yukon Gold or Russet potatoes
- 3 tbsp extra virgin olive oil
- 1.5 tsp kosher salt
- 1 tsp freshly cracked black pepper
- 2 tbsp fresh rosemary or thyme, chopped
Instructions
- 1. Preheat your oven to 425°F (220°C).
- 2. Wash and optionally peel the potatoes. Cut them into even one-inch chunks.
- 3. In a large bowl, toss the potato chunks with olive oil, salt, pepper, and herbs until well-coated.
- 4. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
- 5. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
- 6. Serve hot alongside your favorite main dish or enjoy as a tasty snack.
