Description

Ingredients

  • 2 lbs Yukon Gold or Russet potatoes
  • 3 tbsp extra virgin olive oil
  • 1.5 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 2 tbsp fresh rosemary or thyme, chopped

Instructions

  1. 1. Preheat your oven to 425°F (220°C).
  2. 2. Wash and optionally peel the potatoes. Cut them into even one-inch chunks.
  3. 3. In a large bowl, toss the potato chunks with olive oil, salt, pepper, and herbs until well-coated.
  4. 4. Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
  5. 5. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
