- 8 oz short pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup bell peppers (mixed colors), diced
- ½ cup black olives, sliced
- ¾ cup feta cheese, crumbled
- ½ cup Italian dressing
Instructions
- 1. Cook the Pasta: Boil salted water in a large pot. Add pasta and cook until al dente according to package directions (about 8-10 minutes).
- 2. Prepare the Veggies: While the pasta cooks, chop cherry tomatoes in half, dice cucumbers and bell peppers, and slice black olives.
- 3. Drain and Cool: Drain the cooked pasta in a colander (do not rinse) and let cool for about five minutes.
- 4. Mix it All Together: In a large mixing bowl, combine cooled pasta with chopped veggies, crumbled feta cheese, and drizzle with Italian dressing. Toss gently to combine.
- 5. Chill Out: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to allow flavors to meld.
- 6. Serve and Enjoy: Serve chilled, garnished with fresh herbs if desired.
