- 1. Prep Your Ingredients: Rinse split peas under cold water until the water runs clear. Chop the onion, carrots, celery, and mince the garlic.
- 2. Sauté the Aromatics: In a large pot over medium heat, add olive oil. Sauté the chopped onion, carrots, celery, and garlic for about 5 minutes until softened.
- 3. Add Split Peas: Stir in the rinsed split peas and pour in the vegetable broth. Add dried thyme and bay leaf.
- 4. Bring It All Together: Increase heat to bring to a boil. Once boiling, reduce heat to low and cover. Simmer for about 1 hour or until peas are tender.
- 5. Blend If Desired: For creaminess, use an immersion blender directly in the pot or transfer portions to a regular blender (let cool slightly first). For a chunky texture, simply stir.
