- 4–6 bone-in chicken thighs, skin-on
- 3 cloves fresh garlic, minced
- 2 tbsp olive oil
- 1 tbsp fresh rosemary or thyme, chopped
For the Marinade:
- 1/4 cup low-sodium soy sauce
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp honey
Instructions
- 1. Preheat Your Oven
- Preheat your oven to 425°F (220°C). Prepare a large baking dish.
- 2. Marinate the Thighs
- In a bowl, mix together soy sauce, lemon juice, honey, minced garlic, and fresh herbs. Add chicken thighs to the marinade and let soak for at least 30 minutes.
- 3. Prepare for Cooking
- Place marinated chicken thighs skin-side up in the baking dish. Drizzle with olive oil and sprinkle with salt and pepper.
- 4. Roast the Chicken
- Roast in the preheated oven for about 35-40 minutes until the internal temperature reaches at least 165°F (74°C) and the skin is crispy.
- 5. Let Rest & Serve
- Allow the chicken to rest for five minutes before serving. Drizzle with any leftover marinade from the baking dish for added flavor.
