Ingredients

  • 46 bone-in chicken thighs, skin-on
  • 3 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary or thyme, chopped

For the Marinade:

  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp honey

Instructions

  1. 1. Preheat Your Oven
  2. Preheat your oven to 425°F (220°C). Prepare a large baking dish.
  3. 2. Marinate the Thighs
  4. In a bowl, mix together soy sauce, lemon juice, honey, minced garlic, and fresh herbs. Add chicken thighs to the marinade and let soak for at least 30 minutes.
  5. 3. Prepare for Cooking
  6. Place marinated chicken thighs skin-side up in the baking dish. Drizzle with olive oil and sprinkle with salt and pepper.

  8. Roast in the preheated oven for about 35-40 minutes until the internal temperature reaches at least 165°F (74°C) and the skin is crispy.
