  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

For the Sauce:

  • ¼ cup mayonnaise
  • ¼ cup low-sodium soy sauce
  • ¼ cup sweet chili sauce

For the Bowl:

  • 2 cups cooked rice (jasmine or basmati)
  • 1 cup crunchy vegetables (bell peppers and cucumbers)

Instructions

For the Chicken:

  1. 1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. 2. Season chicken breasts with salt and pepper.
  3. 3. In a skillet over medium heat, add vegetable oil. Once hot, sear chicken for about 5 minutes on each side until golden brown.
  4. 4. Transfer seared chicken to the baking dish and pour half of the sauce over it. Bake for 20-25 minutes until fully cooked.

For the Bowl:

  1. 1. While chicken is baking, prepare rice according to package instructions.
  2. 2. Chop vegetables into bite-sized pieces.
  3. 3. Once chicken is done, slice it into bite-sized pieces.
  4. 4. Assemble bowls by layering rice at the bottom, followed by sliced chicken and colorful veggies. Drizzle with reserved sauce before serving.
