For the Chicken:
- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 2 tbsp vegetable oil
- Salt and pepper to taste
For the Sauce:
- ¼ cup mayonnaise
- ¼ cup low-sodium soy sauce
- ¼ cup sweet chili sauce
For the Bowl:
- 2 cups cooked rice (jasmine or basmati)
- 1 cup crunchy vegetables (bell peppers and cucumbers)
Instructions
For the Chicken:
- 1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- 2. Season chicken breasts with salt and pepper.
- 3. In a skillet over medium heat, add vegetable oil. Once hot, sear chicken for about 5 minutes on each side until golden brown.
- 4. Transfer seared chicken to the baking dish and pour half of the sauce over it. Bake for 20-25 minutes until fully cooked.
For the Bowl:
- 1. While chicken is baking, prepare rice according to package instructions.
- 2. Chop vegetables into bite-sized pieces.
- 3. Once chicken is done, slice it into bite-sized pieces.
- 4. Assemble bowls by layering rice at the bottom, followed by sliced chicken and colorful veggies. Drizzle with reserved sauce before serving.
