- 3–4 pounds chuck roast
- 4 large carrots, thickly sliced
- 4 Yukon Gold or red potatoes, quartered
- 2 medium onions, sliced
- 4 cloves garlic, crushed
- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- 1. Prepare the Meat: Pat the chuck roast dry with paper towels and season generously with salt and pepper on all sides.
- 2. Sear the Roast: Heat a skillet over medium-high heat with a little oil. Sear the roast until browned on all sides for enhanced flavor.
- 3. Chop Vegetables: While the meat sears, chop the carrots, potatoes, and onions into large pieces.
- 4. Layer Ingredients: Place the seasoned roast in the bottom of the slow cooker. Layer the sliced onions on top followed by carrots and potatoes around it.
- 5. Add Liquid: Pour in the beef broth until it just covers the ingredients. Drizzle Worcestershire sauce over everything and sprinkle with thyme.
- 6. Cook: Cover and cook on low heat for about 8 hours or on high heat for about 4 hours until the meat is tender.
- 7. Serve: Transfer to plates and drizzle with broth before serving. Enjoy with crusty bread if desired.
