  • 34 pounds chuck roast
  • 4 large carrots, thickly sliced
  • 4 Yukon Gold or red potatoes, quartered
  • 2 medium onions, sliced
  • 4 cloves garlic, crushed
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. 1. Prepare the Meat: Pat the chuck roast dry with paper towels and season generously with salt and pepper on all sides.
  2. 2. Sear the Roast: Heat a skillet over medium-high heat with a little oil. Sear the roast until browned on all sides for enhanced flavor.
  3. 3. Chop Vegetables: While the meat sears, chop the carrots, potatoes, and onions into large pieces.
  4. 4. Layer Ingredients: Place the seasoned roast in the bottom of the slow cooker. Layer the sliced onions on top followed by carrots and potatoes around it.
  5. 5. Add Liquid: Pour in the beef broth until it just covers the ingredients. Drizzle Worcestershire sauce over everything and sprinkle with thyme.
  6. 6. Cook: Cover and cook on low heat for about 8 hours or on high heat for about 4 hours until the meat is tender.
