Description

Indulge in this cozy taco rice casserole that combines seasoned ground beef, fluffy rice, and melted cheese for a delightful family dinner.

Ingredients

Scale
  • 1 lb lean ground beef
  • 2 cups cooked white or brown rice
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup sour cream (or Greek yogurt)

Instructions

  1. 1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a baking dish by spraying it with nonstick cooking spray.
  2. 2. Cook the Beef: In a skillet over medium heat, brown the ground beef. Drain excess fat, then stir in taco seasoning and diced tomatoes. Simmer for about 5 minutes.
  3. 3. Mix in Rice: In a large bowl, combine the cooked rice with the beef mixture and fold in sour cream until evenly coated.
  4. 4. Layer It Up: Transfer half of the mixture into the prepared baking dish, sprinkle with half of the cheese, then layer the remaining mixture and top with the rest of the cheese.
  5. 5. Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.
  6. 6. Serve It Up: Let the casserole rest for about 5 minutes before serving. Optional toppings include diced avocado or chopped cilantro.
