  • 1 tsp baking powder
  • 1 tsp vanilla extract

For the Toffee Sauce:

  • 1 cup dark brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter

Instructions

For the Pudding:

  1. 1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. 2. In a bowl, combine chopped Medjool dates with boiling water and let soak for about 10 minutes.
  3. 3. In another bowl, cream together softened butter, granulated sugar, and dark brown sugar until light and fluffy (about 3 minutes).
  4. 4. Beat in the eggs one at a time until fully incorporated.
  5. 5. Stir in soaked dates along with their soaking water.
  6. 6. Gently fold in sifted flour, baking powder, and vanilla until just combined.
