- 1 tsp baking powder
- 1 tsp vanilla extract
For the Toffee Sauce:
- 1 cup dark brown sugar
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
Instructions
For the Pudding:
- 1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
- 2. In a bowl, combine chopped Medjool dates with boiling water and let soak for about 10 minutes.
- 3. In another bowl, cream together softened butter, granulated sugar, and dark brown sugar until light and fluffy (about 3 minutes).
- 4. Beat in the eggs one at a time until fully incorporated.
- 5. Stir in soaked dates along with their soaking water.
- 6. Gently fold in sifted flour, baking powder, and vanilla until just combined.
- 7. Pour the batter into the prepared baking dish and bake for about 30-35 minutes or until golden brown and a toothpick comes out clean.
For the Toffee Sauce:
- 8. In a saucepan over medium heat, combine dark brown sugar, heavy cream, and butter. Stir continuously until smooth and bubbly (about 5 minutes).
