Description

Warm up with this hearty beef stew, filled with tender chunks of beef and vibrant vegetables simmered in a rich broth. Perfect for cozy nights or family gatherings.

Ingredients

Scale

For the Stew:

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 4 medium carrots, diced
  • 4 medium potatoes (Russet or Yukon Gold), diced
  • 1 large yellow onion, chopped
  • 4 cups beef broth
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. 1. Brown the Meat: Heat a large pot over medium-high heat with a splash of oil. Add half of the beef pieces and sear until browned on all sides. Remove from pot and set aside. Repeat with remaining beef.
  2. 2. Sauté Vegetables: In the same pot, add chopped onions and minced garlic. Sauté until fragrant and translucent, about three minutes.
  3. 3. Add Remaining Ingredients: Return the browned beef to the pot along with diced carrots, potatoes, bay leaves, thyme, salt, and pepper. Pour in enough beef broth to just cover all ingredients.
  4. 4. Let It Simmer: Bring to a gentle boil, then reduce heat to low. Cover and simmer for about two hours or until the beef is fork-tender.
  5. 5. Taste Test: After two hours, check seasoning levels and adjust salt or pepper if necessary. For a thicker broth, mix cornstarch with water and stir it in before serving.
  6. 6. Serve Up: Ladle the stew into bowls and enjoy warm! Pair with crusty bread or over rice for extra satisfaction.
