- 4 medium carrots, diced
- 4 medium potatoes (Russet or Yukon Gold), diced

- 4 cups beef broth

- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- 1. Brown the Meat: Heat a large pot over medium-high heat with a splash of oil. Add half of the beef pieces and sear until browned on all sides. Remove from pot and set aside. Repeat with remaining beef.
- 2. Sauté Vegetables: In the same pot, add chopped onions and minced garlic. Sauté until fragrant and translucent, about three minutes.
- 3. Add Remaining Ingredients: Return the browned beef to the pot along with diced carrots, potatoes, bay leaves, thyme, salt, and pepper. Pour in enough beef broth to just cover all ingredients.
- 4. Let It Simmer: Bring to a gentle boil, then reduce heat to low. Cover and simmer for about two hours or until the beef is fork-tender.
- 5. Taste Test: After two hours, check seasoning levels and adjust salt or pepper if necessary. For a thicker broth, mix cornstarch with water and stir it in before serving.
