Ingredients
Scale
For the Base:
- 6 large eggs
- 4 oz cream cheese, softened
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 cup fresh spinach, chopped
- Salt and pepper to taste
- For Optional Add-ins:
- 1/2 cup diced bell peppers (any color)
Instructions
- 1. Preheat Your Oven: Preheat your oven to 325°F (160°C). If using silicone molds, place them on a baking tray for easy transfer.
- 2. Blend the Base: In a blender or food processor, combine the eggs and cream cheese until smooth. This step incorporates air for fluffiness.
- 3. Add Flavor: Mix in shredded cheese, salt, pepper, and spinach (and bell peppers if using). Blend again until well combined.
- 4. Fill Your Molds: Carefully pour the mixture into the silicone molds until they're about three-quarters full.
- 5. Bake: Place the filled molds on the baking tray in the preheated oven. Bake for 25-30 minutes or until the tops are set and slightly puffed.
- 6. Cool & Serve: Let them cool for a few minutes before gently removing from the mold. Serve warm with salsa if desired.
