Description

Indulge in this easy-to-make Shrimp Scampi Pasta, featuring succulent shrimp and a garlic-infused butter sauce that will elevate any dining occasion.

Ingredients

Scale

For the Pasta:

  • 8 oz linguine or spaghetti
  • 1 tbsp salt (for boiling water)

For the Sauce:

  • 1 lb fresh shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Cook the Pasta
  2. Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
  3. 2. Sauté Garlic
  4. In a large skillet over medium heat, melt butter with olive oil. Once hot, add minced garlic and sauté until fragrant (about one minute). Avoid burning the garlic.
  5. 3. Add Shrimp
  6. Add the fresh shrimp to the skillet and cook until they turn pink and opaque (approximately two minutes per side). If you prefer a spicy kick, sprinkle in red pepper flakes at this stage.
  7. 4. Combine Ingredients
  8. Squeeze in fresh lemon juice and add drained pasta along with reserved pasta water as needed to achieve desired sauciness. Stir well until everything is evenly coated.
  9. 5. Garnish and Serve
  10. Finish with chopped parsley and adjust seasoning with salt and pepper if necessary. Serve immediately for a delightful meal!
