Instructions

For the Cookies:

  1. 1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. 2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. 3. In a large mixing bowl, blend vegetable oil and granulated sugar with an electric mixer until combined. Add eggs one at a time, then mix in vanilla extract and red food coloring until well combined.
  4. 4. Gradually add the dry ingredients to the wet mixture until just combined. Do not overmix; the dough should be thick but slightly sticky.
  5. 5. Using a cookie scoop or tablespoon, drop generous amounts of dough onto prepared baking sheets, spacing them about two inches apart.
