- 3. Add Beans and Seasonings: Stir in soaked (or drained canned) red beans along with Cajun seasoning and bay leaves. Mix well.
- 4. Pour in Chicken Broth: Add enough chicken broth to cover everything by about an inch. Bring to a gentle boil, then reduce heat to low.
- 5. Simmer: Cover pot and let simmer for about 1 hour if using dried beans (or about 20 minutes if using canned), stirring occasionally.
- 6. Serve With Rice: While the mixture simmers, cook long grain rice according to package instructions. Serve the bean mixture over fluffy rice.
