Ingredients
For the spices:
- Fresh Spinach: 4 cups
- Paneer: 1 cup, cubed
- Onion: 1 medium, finely chopped
- Garlic: 3 cloves, minced
- Ginger: 1-inch piece, grated
- Tomato: 1 large, chopped
- Cumin Seeds: 1 tsp
- Turmeric Powder: 1/2 tsp
- Coriander Powder: 1 tsp
- Salt: to taste
- Oil: 2 tbsp for sautéing
Instructions
- 1. Blanching the Spinach
- Bring a pot of water to a boil. Add fresh spinach leaves and blanch for about 2 minutes until wilted. Remove from boiling water and plunge into ice-cold water to retain color.
- 2. Preparing Paneer
- Cut paneer into bite-sized cubes. For crispy edges, lightly fry the paneer cubes in a pan with a bit of oil until golden brown on all sides.
- 3. Sautéing Aromatics
- In the same pan, heat oil over medium heat. Add cumin seeds and let them sizzle. Toss in finely chopped onions and sauté until translucent (about 5 minutes).
- 4. Blending Ingredients
- Add minced garlic, grated ginger, and chopped tomatoes to the pan. Stir until tomatoes soften (about 5 minutes). Blend blanched spinach into a smooth puree and add it to the pan.
- 5. Combining Flavors
- Pour spinach puree into the pan with sautéed aromatics. Add turmeric powder, coriander powder, and salt; mix well. Let it simmer for about 10 minutes.
- 6. Adding Paneer
- Gently fold in fried paneer cubes into the spinach mixture. Simmer together for another 5 minutes to allow flavors to meld.
- 7. Serve
- Transfer to serving plates and enjoy warm with naan or basmati rice.
