Ingredients

For the spices:

  • Fresh Spinach: 4 cups
  • Paneer: 1 cup, cubed
  • Onion: 1 medium, finely chopped
  • Garlic: 3 cloves, minced
  • Ginger: 1-inch piece, grated
  • Tomato: 1 large, chopped
  • Cumin Seeds: 1 tsp
  • Turmeric Powder: 1/2 tsp
  • Coriander Powder: 1 tsp
  • Salt: to taste
  • Oil: 2 tbsp for sautéing

Instructions

  1. 1. Blanching the Spinach
  2. Bring a pot of water to a boil. Add fresh spinach leaves and blanch for about 2 minutes until wilted. Remove from boiling water and plunge into ice-cold water to retain color.
  3. 2. Preparing Paneer
  4. Cut paneer into bite-sized cubes. For crispy edges, lightly fry the paneer cubes in a pan with a bit of oil until golden brown on all sides.
  5. 3. Sautéing Aromatics
  6. In the same pan, heat oil over medium heat. Add cumin seeds and let them sizzle. Toss in finely chopped onions and sauté until translucent (about 5 minutes).
  7. 4. Blending Ingredients
  8. Add minced garlic, grated ginger, and chopped tomatoes to the pan. Stir until tomatoes soften (about 5 minutes). Blend blanched spinach into a smooth puree and add it to the pan.
  9. 5. Combining Flavors
  10. Pour spinach puree into the pan with sautéed aromatics. Add turmeric powder, coriander powder, and salt; mix well. Let it simmer for about 10 minutes.
  11. 6. Adding Paneer
  12. Gently fold in fried paneer cubes into the spinach mixture. Simmer together for another 5 minutes to allow flavors to meld.
  13. 7. Serve
  14. Transfer to serving plates and enjoy warm with naan or basmati rice.
