- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup walnuts or almonds, toasted
- 1/3 cup dried cranberries
For the Dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions
- 1. Prepare the Kale: Wash the kale thoroughly under cold water. Remove tough stems and tear leaves into bite-sized pieces. Massage with olive oil and a pinch of salt until softened.
- 2. Chop Your Veggies: Halve cherry tomatoes, dice cucumber, and thinly slice red onion. Set aside.
- 3. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, honey or maple syrup, salt, and pepper until well combined.
