- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup fresh cranberries
- Zest of 1 orange
- 2 large eggs
- 1 cup buttermilk
- 1/4 cup melted butter
Instructions
- 1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray.
- 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
- 3. In another bowl, beat together the eggs and buttermilk until smooth. Stir in the melted butter and orange zest.
- 4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
- 5. Carefully fold in the fresh cranberries until evenly distributed throughout the batter.
- 6. Pour the batter into the prepared loaf pan and bake for about 60–70 minutes or until a toothpick inserted in the center comes out clean.
- 7. Let cool slightly before slicing. Enjoy warm or toasted with butter!
