Instructions
For the Cookie Dough:
- 1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- 2. In a bowl, whisk together flour, baking soda, and salt.
- 3. In a large mixing bowl, cream together softened butter, brown sugar, granulated sugar, and vanilla extract until light and fluffy.
- 4. Add eggs one at a time to the butter mixture until fully incorporated.
- 5. Gradually mix in dry ingredients until just combined. Fold in chocolate chips gently.
For the Cheesecake Filling:
- 1. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
- Assembling and Baking:
- 1. Scoop about two tablespoons of cookie dough onto the prepared baking sheet. Flatten slightly.
- 2. Place about one tablespoon of cheesecake filling in the center and cover it with another tablespoon of cookie dough.
- 3. Bake for 12-15 minutes or until golden brown around the edges but soft in the center.
- 4. Let cool slightly on baking sheets before transferring them to wire racks.
