  • 3 tbsp white miso paste
  • 1 tbsp fresh ginger, grated

For the Noodles:

  • 8 oz ramen noodles (fresh or dried)

For Toppings:

  • 2 cups bok choy, chopped (or spinach)
  • 2 soft-boiled eggs
  • 2 green onions, thinly sliced

Instructions

For the Broth:

  1. 1. In a large pot over medium heat, combine chicken broth and water.
  2. 2. Add soy sauce and miso paste; stir until well mixed. Bring to a gentle simmer.
  3. 3. Grate ginger directly into the pot and let simmer for 10 minutes.

For the Noodles:

  1. 1. Cook ramen noodles according to package instructions. Drain and set aside.

For Toppings:

  1. 1. Add bok choy to the simmering broth during the last few minutes of cooking.
