- 3 tbsp white miso paste
- 1 tbsp fresh ginger, grated
For the Noodles:
- 8 oz ramen noodles (fresh or dried)
For Toppings:
- 2 cups bok choy, chopped (or spinach)
- 2 soft-boiled eggs
- 2 green onions, thinly sliced
Instructions
For the Broth:
- 1. In a large pot over medium heat, combine chicken broth and water.
- 2. Add soy sauce and miso paste; stir until well mixed. Bring to a gentle simmer.
- 3. Grate ginger directly into the pot and let simmer for 10 minutes.
For the Noodles:
- 1. Cook ramen noodles according to package instructions. Drain and set aside.
For Toppings:
- 1. Add bok choy to the simmering broth during the last few minutes of cooking.
- 2. Soft boil eggs by placing them in boiling water for about six minutes, then transfer to ice water to stop cooking.
- To Assemble:
- 1. In bowls, layer cooked noodles first, followed by ladling hot broth over them.
- 2. Halve soft-boiled eggs and place on top along with sliced green onions.
