For the Chicken:

  • 34 boneless, skinless chicken breasts
  • 46 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

For the Potatoes:

  • 1 lb baby potatoes, halved

For the Sauce:

  • 2 tbsp butter
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a large bowl, toss chicken breasts with olive oil, minced garlic, salt, pepper, dried herbs, and half of the Parmesan cheese until well-coated.
  3. 3. In another bowl, combine halved baby potatoes with olive oil, salt, and pepper. Toss until evenly coated.
  4. 4. Lightly grease a baking dish. Place seasoned chicken breasts in the dish and arrange potato halves around them. Sprinkle remaining Parmesan cheese over everything.
  5. 5. Bake in preheated oven for about 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
  6. 6. In a small bowl, melt butter and mix with lemon juice. Drizzle this mixture over baked chicken and potatoes before serving.
