- 3–4 boneless, skinless chicken breasts
- 3 large yellow onions (or mix with red onions)
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 packet French onion soup mix
- 2 cups shredded Gruyère cheese
Instructions
- 1. Preheat and Prepare
- Preheat your oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
- 2. Sauté Those Onions
- In a skillet over medium heat, add a drizzle of olive oil. Sauté thinly sliced onions for about 15 minutes until soft and caramelized, stirring occasionally.
- 3. Season the Chicken
- While the onions are cooking, season the chicken breasts with salt, pepper, and a sprinkle of garlic powder.
- 4. Assemble It All Together
- In the prepared baking dish, layer the seasoned chicken at the bottom. Spread the caramelized onions over the chicken and sprinkle the French onion soup mix on top.
- 5. Add Broth and Bake
- Pour beef broth evenly over everything until it just covers the chicken. Cover with foil and bake for about 30 minutes or until cooked through.

- Remove foil and generously sprinkle shredded Gruyère cheese over the casserole. Return to the oven uncovered for an additional 10-15 minutes or until bubbly and golden brown.
