- 3 tbsp hot honey (adjust to taste)

- 1 cup cottage cheese
Instructions
For the Sweet Potatoes:
- 1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- 2. Toss the cubed sweet potatoes in olive oil, salt, and pepper. Spread evenly on the baking sheet.
- 3. Roast for about 25-30 minutes or until fork-tender and slightly crispy, flipping halfway through.
For the Beef Mixture:
- 1. While the sweet potatoes roast, heat a skillet over medium-high heat.
- 2. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
- 3. Stir in fresh spinach until wilted, then add hot honey to taste.
For Assembly:
- 1. In bowls, start with a scoop of cottage cheese as a base.
- 2. Layer roasted sweet potatoes on top followed by the spicy beef mixture. Drizzle extra hot honey if desired.
