  • 2 cups fresh spinach
  • 3 tbsp hot honey (adjust to taste)

For Assembly:

  • 1 cup cottage cheese

Instructions

For the Sweet Potatoes:

  1. 1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. 2. Toss the cubed sweet potatoes in olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. 3. Roast for about 25-30 minutes or until fork-tender and slightly crispy, flipping halfway through.

For the Beef Mixture:

  1. 1. While the sweet potatoes roast, heat a skillet over medium-high heat.
  2. 2. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
