- 1. Prepare Your Ingredients
- Gather all ingredients. Chop vegetables into bite-sized pieces and mince the garlic.
- 2. Cook the Pasta
- In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
- 3. Sauté the Vegetables
- In a large skillet over medium heat, add olive oil. Sauté chopped onion and bell pepper until softened (about 5-7 minutes). Add minced garlic and cook for an additional minute until fragrant.
- 4. Create the Sauce
- Stir in tomato paste along with paprika, cumin, and black pepper. Mix well and add half of the reserved pasta water to create a smooth sauce.
- 5. Combine Pasta and Sauce
- Add drained pasta to skillet with vegetables and sauce. Toss everything together until well-coated. If needed, add more reserved pasta water gradually until desired consistency is reached.
