  • 1 bell pepper, chopped
  • 4 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper

For Garnish:

  • Fresh parsley, chopped

Instructions

  1. 1. Prepare Your Ingredients
  2. Gather all ingredients. Chop vegetables into bite-sized pieces and mince the garlic.
  3. 2. Cook the Pasta
  4. In a large pot of salted boiling water, cook pasta according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
  5. 3. Sauté the Vegetables
  6. In a large skillet over medium heat, add olive oil. Sauté chopped onion and bell pepper until softened (about 5-7 minutes). Add minced garlic and cook for an additional minute until fragrant.
  7. 4. Create the Sauce
  8. Stir in tomato paste along with paprika, cumin, and black pepper. Mix well and add half of the reserved pasta water to create a smooth sauce.
  9. 5. Combine Pasta and Sauce
  10. Add drained pasta to skillet with vegetables and sauce. Toss everything together until well-coated. If needed, add more reserved pasta water gradually until desired consistency is reached.
