For the Chili:
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) white beans (cannellini or great northern)
- 1 can (4 oz) diced green chilies
- 4 cups low-sodium chicken broth
For the Sauce:
- 8 oz cream cheese, softened
- 1 tsp ground cumin
- 1 tsp chili powder
Instructions
- 1. Cook the Chicken
- In a large pot over medium heat, add the chicken breasts and pour in enough chicken broth to cover them. Season with salt and pepper. Simmer for about 15-20 minutes until cooked through.
- 2. Shred the Chicken
- Remove the chicken from the pot and let it rest for a minute. Shred using two forks.
- 3. Sauté Veggies
- In the same pot, add chopped onion and minced garlic. Sauté until fragrant, then stir in the diced green chilies.
- 4. Combine Ingredients
- Return shredded chicken to the pot along with the white beans and remaining chicken broth. Mix everything well.

- Stir in softened cream cheese until melted and incorporated into the chili.

- Add ground cumin and chili powder, stirring to combine. Let simmer for an additional 10 minutes to meld flavors.
