- 1. Sauté the Aromatics
- In a large pot over medium heat, add a splash of olive oil. Sauté the chopped onions and minced garlic until soft and translucent, about 5 minutes.
- 2. Add Broccoli
- Stir in the fresh broccoli florets and cook for another 3–5 minutes until bright green.
- 3. Pour in the Broth
- Add 4 cups of vegetable broth to the pot. Bring to a gentle simmer for about 10 minutes until the broccoli is tender but still vibrant.
- 4. Blend Until Smooth
- Use an immersion blender to puree the soup until smooth. If you don’t have one, carefully transfer it to a traditional blender in batches.
- 5. Stir in Cream and Cheese
- Return the blended soup to low heat and mix in 1 cup of heavy cream along with the grated sharp cheddar cheese. Stir until melted and creamy.
- 6. Serve
