Scale
- Key Ingredients:
- 3–4 boneless, skinless chicken breasts
- 1 cup wild rice blend
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- Freshly cracked black pepper to taste
Instructions
- Instructions:
- 1. Prepare Your Ingredients: Gather all ingredients. Chop the vegetables and mince the garlic to have everything ready for cooking.
- 2. Cook the Chicken: In a large pot over medium heat, add a splash of olive oil. Season the chicken breasts with salt and pepper. Sear each side until golden brown (about five minutes per side). Remove from the pot and set aside.
- 3. Sauté Vegetables: In the same pot, add chopped onions, carrots, and celery (don’t discard the browned bits). Stir occasionally until softened (around five minutes). Add minced garlic in the last minute of cooking.
- 4. Combine Everything: Pour in the chicken broth and add the wild rice blend. Bring to a gentle boil before reducing to a simmer for about fifteen minutes.
- 5. Add Chicken Back In: Chop or shred the cooked chicken into bite-sized pieces and return it to the pot along with dried thyme. Let it simmer until the rice is tender (another ten to fifteen minutes).
- 6. Season & Serve: Taste and adjust seasoning with salt or pepper if needed. Ladle portions into bowls and enjoy with crusty bread or crackers.
