Warm your soul with this delightful cabbage soup, brimming with fresh vegetables and fragrant herbs—perfect for chilly evenings or meal prep!

Ingredients

Scale
  • 1/2 medium head green cabbage, sliced thinly
  • 2 medium carrots, diced
  • 3 stalks celery, chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can (14 oz) diced tomatoes, with juices
  • Fresh thyme and bay leaves for seasoning

Instructions

  1. Prepare Your Veggies: Slice the cabbage, chop the onions, dice the carrots, and chop the celery.
  2. Sauté Aromatics: In a large pot over medium heat, drizzle with 2 tablespoons olive oil. Add chopped onions and sauté until translucent (about 5 minutes). Add minced garlic and stir for another minute.
  3. Add Remaining Vegetables: Add chopped carrots and celery to the pot; cook for an additional 5 minutes until slightly softened.
  4. Pour in Broth & Tomatoes: Carefully add vegetable broth and diced tomatoes (including juices). Bring to a gentle boil.
  5. Season & Simmer: Stir in salt, black pepper to taste, bay leaves, and fresh thyme. Reduce heat to low and simmer uncovered for about 30 minutes.
  6. Serve & Enjoy: Discard bay leaves before serving hot! Garnish with fresh thyme if desired.
