- 1/2 medium head green cabbage, sliced thinly
- 2 medium carrots, diced
- 3 stalks celery, chopped
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 1 can (14 oz) diced tomatoes, with juices
- Fresh thyme and bay leaves for seasoning
Instructions
- Prepare Your Veggies: Slice the cabbage, chop the onions, dice the carrots, and chop the celery.
- Sauté Aromatics: In a large pot over medium heat, drizzle with 2 tablespoons olive oil. Add chopped onions and sauté until translucent (about 5 minutes). Add minced garlic and stir for another minute.
- Add Remaining Vegetables: Add chopped carrots and celery to the pot; cook for an additional 5 minutes until slightly softened.
- Pour in Broth & Tomatoes: Carefully add vegetable broth and diced tomatoes (including juices). Bring to a gentle boil.
- Season & Simmer: Stir in salt, black pepper to taste, bay leaves, and fresh thyme. Reduce heat to low and simmer uncovered for about 30 minutes.
- Serve & Enjoy: Discard bay leaves before serving hot! Garnish with fresh thyme if desired.
