For the Cake:
- 1. Preheat your oven to 350°F (175°C). Grease two round cake pans with butter and dust lightly with flour.
- 2. In a large bowl, whisk together flour, baking powder, and salt until well combined. Set aside.
- 3. In another bowl, beat together softened butter and granulated sugar until fluffy (about three minutes). Add eggs one at a time, mixing well after each addition.
- 4. Slowly pour in the coconut milk while mixing on low speed until blended smoothly.
- 5. Gradually add the dry ingredients into the wet mixture until just combined. Gently fold in the coconut flakes.
- 6. Divide batter evenly between prepared pans and bake for about 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean. Let cool completely before frosting.
For the Frosting:
- 1. In a medium bowl, beat together cream cheese and powdered sugar until smooth and creamy.
- 2. Once the cakes are completely cooled, spread a generous layer of cream cheese frosting between the cake layers and on top of the cake.
