For the Stuffing:
- 1 box (6 oz) stuffing mix
- 2 cups low-sodium chicken broth
For the Vegetables:
- 1 cup chopped carrots
- 1 cup chopped celery
For the Topping:
- 1 cup shredded cheddar or mozzarella cheese
Instructions
For the Chicken:
- 1. Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick cooking spray.
- 2. Season the boneless, skinless chicken breasts with salt and pepper. Place them in a single layer in the greased baking dish.
For the Stuffing:
- 1. In a large bowl, combine the stuffing mix with 2 cups of chicken broth. Stir until just moistened.
- 2. Fold in the chopped carrots and celery for added flavor and nutrition.
- To Assemble:
- 1. Spread the stuffing mixture evenly over the chicken breasts in your baking dish. Top generously with shredded cheese.
- 2. Cover with aluminum foil and bake for about 30 minutes. Remove the foil and bake for an additional 15 minutes or until bubbly and golden brown.
- 3. Let rest for a few minutes before serving.
