For the Chicken:
- 3–4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp taco seasoning
For the Veggies:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1/4 cup fresh cilantro, chopped
For the Toppings:
- 1 avocado, sliced
- 1/2 cup sour cream
- 1 cup shredded cheese (sharp cheddar or Mexican blend)
Instructions
For the Chicken:
- 1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with taco seasoning on both sides.
- 2. Place seasoned chicken in the hot skillet. Cook for about 6-7 minutes per side until golden brown and cooked through (165°F). Remove from heat and let rest.
For the Veggies:
- 3. In the same skillet, add sliced bell peppers and red onion. Sauté for about five minutes until softened.
- Assembling Your Bowl:
- 4. After resting, slice the chicken into bite-sized pieces.
- 5. Start with rice or quinoa at the bottom of your bowl. Layer sautéed veggies on top followed by sliced chicken.
- 6. Finish with avocado slices, a dollop of sour cream, shredded cheese, and freshly chopped cilantro. Serve warm and enjoy!
