  • 34 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning

For the Veggies:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1/4 cup fresh cilantro, chopped

For the Toppings:

  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1 cup shredded cheese (sharp cheddar or Mexican blend)

Instructions

For the Chicken:

  1. 1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with taco seasoning on both sides.
  2. 2. Place seasoned chicken in the hot skillet. Cook for about 6-7 minutes per side until golden brown and cooked through (165°F). Remove from heat and let rest.

For the Veggies:

  1. 3. In the same skillet, add sliced bell peppers and red onion. Sauté for about five minutes until softened.
