Description

Start your day right with this indulgent Breakfast Poutine featuring crispy fries, creamy cheese curds, poached eggs, and rich hollandaise sauce—a true brunch delight!

Ingredients

Scale

For the Fries:

  • 1 lb frozen crinkle-cut French fries

For the Toppings:

  • 1 cup fresh cheese curds (or shredded mozzarella)
  • 4 large eggs
  • 1 cup brown gravy (store-bought or homemade)

For the Hollandaise Sauce:

  • 4 large egg yolks
  • 1/2 cup unsalted butter
  • 2 tbsp freshly squeezed lemon juice

Instructions

For the Fries:

  1. 1. Preheat the oven according to package instructions. Spread frozen fries on a baking sheet.
  2. 2. Bake for 20-25 minutes until golden brown and crispy.

For the Toppings:

  1. 3. While fries are baking, heat gravy in a saucepan over low heat until hot.
  2. 4. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3 minutes until whites are set but yolks remain runny.

For the Hollandaise Sauce:

  1. 5. In a small bowl, whisk together egg yolks and lemon juice until slightly thickened.
  2. 6. Melt butter in another bowl until hot but not boiling. Gradually drizzle melted butter into the egg mixture while whisking continuously until smooth.
  3. Assembly:
  4. 7. Once everything is cooked, layer crispy fries on plates, sprinkle with cheese curds while still hot to allow melting.
  5. 8. Pour warm gravy over fries, place poached eggs on top, and drizzle with hollandaise sauce. Garnish with chives or paprika if desired.
