- 4 large eggs
- 1 cup brown gravy (store-bought or homemade)

- 4 large egg yolks
- 1/2 cup unsalted butter
- 2 tbsp freshly squeezed lemon juice

For the Fries:
- 1. Preheat the oven according to package instructions. Spread frozen fries on a baking sheet.
- 2. Bake for 20-25 minutes until golden brown and crispy.
For the Toppings:
- 3. While fries are baking, heat gravy in a saucepan over low heat until hot.
- 4. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3 minutes until whites are set but yolks remain runny.
