For the Chicken:
- 3–4 boneless, skinless chicken breasts
- 2 tbsp blackening seasoning (paprika, cayenne, garlic powder blend)
For the Pasta:
- 12 oz fettuccine or linguine
For the Sauce:
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp butter
- 3 cloves fresh garlic, minced
Instructions
For the Chicken:
- 1. Preheat a large skillet over medium-high heat. Season both sides of chicken breasts generously with blackening seasoning.
- 2. Add a tablespoon of oil to the hot skillet and cook chicken for 6-7 minutes on each side until blackened and cooked through. Remove from heat and let rest.
For the Pasta:
- 1. In a separate pot, bring salted water to a boil. Cook fettuccine according to package instructions until al dente. Reserve some pasta water before draining.
For the Sauce:
- 1. In the same skillet used for chicken, melt butter over medium heat. Add minced garlic and sauté until fragrant (about one minute).
- 2. Pour in heavy cream and stir until combined. Gradually whisk in Parmesan cheese until melted and smooth. If too thick, add reserved pasta water for desired consistency.
- To Combine:
- 1. Slice rested chicken into strips. Toss with drained pasta in the creamy sauce until well coated.
- 2. Serve hot, drizzled with more sauce for an extra touch of indulgence.
